Carcass Evaluation RESULTS 2021

The Carcass Evaluation is held the Tuesday after the Meat Animal Sale at Beck’s Meat Processing Plant. Carcasses are evaluated and placed by a certified judge who also teaches youth participants how to assess meat for qualities desired by consumers (cuts of meat that are lean, nutritious, and possess desirable eating characteristics).
